  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic, minced
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar
  • 1 tsp Cornstarch (mixed with 1 tbsp water)
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped

Instructions

  1. Sauté chicken pieces in oil until browned and cooked through, then set aside.
  2. In the same skillet, sauté minced garlic, then add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir to combine.
  3. Mix cornstarch with water and add to the skillet while stirring; simmer until the sauce thickens.
  4. Return chicken to the skillet along with pineapple chunks and diced bell pepper; cook until vegetables are tender.
  5. Serve over cooked rice and garnish with green onions.
