  • 1/4 cup pistachio paste
  • 1 tablespoon heavy cream
  • 1/2 cup unsalted butter
  • 4 ounces dark chocolate (60–70%)
  • 2 large eggs
  • 2 large egg yolks
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour

Instructions

  1. In a heatproof bowl, melt white chocolate with heavy cream until smooth. Stir in pistachio paste and salt, then freeze in molds until solid.
  2. Preheat the oven to 425°F (220°C) and grease six ramekins with butter, dusting with cocoa powder.
  3. Melt butter and dark chocolate together until smooth. In another bowl, whisk eggs, egg yolks, sugar, and salt until thickened.
  4. Combine the melted chocolate mixture with the egg mixture, then fold in flour gently.
  5. Spoon batter into ramekins, place a pistachio disc in the center, and cover with more batter.
  6. Bake for 11 to 13 minutes until edges are firm but centers jiggle slightly. Let rest for one minute before serving.
