  • 3/4 cup softened butter
  • 2 ounces cream cheese
  • 1 cup sugar
  • 1 tablespoon corn syrup
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 Pop Tarts (divided)
  • 1 cup powdered sugar
  • 1 1/2 tablespoons water
  • Food coloring & sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a stand mixer, beat together softened butter and cream cheese until smooth. Add sugar and corn syrup; mix until fluffy.
  3. Incorporate the egg, then gradually add flour, baking soda, and salt. Mix until just combined.
  4. Coarsely chop six Pop Tarts and fold into the dough.
  5. Scoop dough onto a parchment-lined baking sheet and flatten each mound to about ½ inch thick.
  6. Chop remaining two Pop Tarts and press pieces into the tops of each cookie.
  7. Bake for 10-12 minutes until edges are lightly golden but centers remain soft.
