  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. Prepare the crepe batter by blending all the crepe ingredients until smooth. Allow it to rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly coat it with butter.
  3. Pour about ¼ cup of batter into the skillet and tilt to spread evenly. Cook for 1-1½ minutes until golden brown, then flip and cook for another minute.
  4. Repeat until all batter is used, adding butter as needed between batches.
  5. Fill each crepe with maple cream cheese filling, fold gently, and serve with your choice of toppings.
