  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 3 tbsp cane sugar
  • 2 tbsp cinnamon
  • 1/2 cup canned pumpkin
  • 2 cups almond milk or milk of choice
  • 4 eggs
  • 1 tsp vanilla extract
  • For the Mascarpone Filling: 8 oz mascarpone
  • 1 tbsp almond milk or milk of choice
  • 1 cup powdered sugar

Instructions

  1. Prepare brown butter in a saucepan over medium-high heat until golden brown; set aside.
  2. In a blender, combine flour, sugar, cinnamon, pumpkin, milk, eggs, and vanilla. Pulse until smooth; add browned butter and pulse to mix.
  3. Heat a nonstick skillet over medium heat. Pour batter into the skillet and swirl to spread evenly. Cook for about 1 minute until bubbles form; flip and cook for another 30 seconds.
  4. In a bowl, whisk mascarpone with almond milk until smooth; gradually mix in powdered sugar.
  5. Spread mascarpone filling on each crepe, fold as desired, and serve.
