  • 1 cup whole milk
  • 6 tablespoons butter
  • 2 cups granulated sugar
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

  • 10 ounces frozen raspberries (thawed)
  • 2 cups powdered sugar
  • 2 cups desiccated coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking tray.
  2. In one bowl, mix eggs, milk, melted butter, and vanilla. In another bowl, sift together flour, baking powder, and salt.
  3. Combine wet and dry ingredients until smooth, then pour into the prepared tray.
  4. Bake for 30-40 minutes until golden brown; cool on a rack.
  5. For the glaze, heat raspberries, water, and sugar in a saucepan until dissolved; stir in vegan gelatin until dissolved and cool slightly.
  6. Cut cooled cake into squares, dip in glaze, then roll in coconut.
