  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 2 cups all-purpose flour
  • 1 tablespoon red food coloring
  • 1 pie crust (store-bought or homemade)
  • 2 ounces cream cheese
  • ½ cup sugar
  • ½ cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your pie crust in a 9” pie plate.
  2. In an electric mixer, cream together softened butter and brown sugar until crumbly. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and cocoa powder until smooth.
  3. Gradually mix in flour, followed by red food coloring and vinegar until fully combined.
  4. Pour the brownie batter into the prepared pie crust placed on a cookie sheet. Bake for 50-60 minutes, or until puffed and cracked around the edges.
  5. Allow the pie to cool before preparing the whipped cream by mixing cream cheese, sugar, and remaining vanilla extract until smooth. Slowly add cold heavy whipping cream until stiff peaks form.
