  • 8 oz full-fat cream cheese (for frosting)
  • 1 cup powdered sugar (for frosting)
  • ¼ cup butter (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 23 tbsp heavy cream (for frosting)
  • ½ tsp fine salt
  • pinch of salt (for filling)

Instructions

  1. Proof the yeast by combining warm buttermilk and active dry yeast in a small bowl. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl or stand mixer, combine bread flour, granulated sugar, cocoa powder, fine salt, eggs, softened butter, vanilla extract, red food coloring, and the yeast mixture until smooth.
  3. Cover the dough and let it rise in a warm spot until doubled in size (about 1-2 hours).
  4. Roll out the dough on a floured surface into a rectangle about ¼ inch thick.
  5. Spread softened butter over the dough and sprinkle with filling ingredients (brown sugar, cinnamon). Roll tightly from one end to another and cut into equal pieces.
  6. Place on a parchment-lined baking sheet to rise again until puffy (about 30-45 minutes).
  7. Preheat oven to 350°F (175°C) and bake for about 25 minutes until golden brown.
  8. Cool slightly before frosting with cream cheese mixture made by mixing softened cream cheese with powdered sugar, softened butter, vanilla extract, and heavy cream until smooth.
