  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh basil
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a baking sheet, spread the zucchini, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion.
  3. Drizzle with olive oil and season with salt, pepper, Italian seasoning, and garlic. Toss well.
  4. Roast for 20-25 minutes until vegetables are tender and slightly caramelized.
  5. Meanwhile, bring water to a boil in a pot. Cook the orzo according to package instructions until al dente; drain.
  6. In a mixing bowl, combine the roasted vegetables with the cooked orzo.
  7. Add feta cheese and basil; toss gently.
