  • 2-2 ½ pounds beef flank steak
  • ¼ cup vegetable oil or more
  • Salt, pepper, cumin, and Sazon (adjust to taste)
  • 1 large bay leaf
  • 1 large onion (sliced)
  • 4-5 cloves garlic (minced)
  • 2 bell peppers (red or green, seeded and sliced into strips)
  • 2 tomatoes (sliced into strips)
  • 1 can (8 ounce) tomato sauce
  • 1 thyme sprig
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1-2 cups beef broth
  • 1-2 packets Sazon (substitute beef or chicken bouillon)
  • 2-3 tablespoons parsley/cilantro

Instructions

  1. Season the beef with salt, pepper, cumin, and Sazon.
  2. Heat vegetable oil in a skillet over medium heat; sear the beef until browned on both sides.
  3. Add the bay leaf after browning one side.
  4. Sauté onions, garlic, bell peppers, and tomatoes in the same skillet until softened; add tomato sauce and spices.
  5. Layer half of the vegetable mixture in the slow cooker, place seared beef on top, then cover with the remaining veggies.
  6. Cook on high for 3 ½–4 hours or low for 7–8 hours until tender. Shred beef and mix with sauce before serving.
