  • 1 lb boneless chicken breast
  • 2 cups mushrooms
  • 1 clove garlic
  • 1 1/2 cups dry white apple vinegar
  • 1/2 cup seasoned flour (flour, salt, pepper)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Salt and pepper to taste

Instructions

  1. Pound the chicken breasts between wax paper until about 1/4 inch thick; cut into smaller pieces.
  2. Heat butter and olive oil in a heavy skillet over medium heat.
  3. Dredge chicken in seasoned flour and sauté until golden brown on both sides; remove from pan.
  4. Sauté mushrooms and garlic in the same pan until browned.
  5. Deglaze with white apple vinegar, then add thyme.
  6. Return chicken to the pan; simmer covered for 15–20 minutes.
  7. Remove chicken; stir in cream and asiago until melted, then return chicken to warm through.
  8. Serve over pasta or rice, garnished with fresh thyme.
