  • 1 oz olive oil (25g)
  • 2 onions (approx. 450g), peeled and thinly sliced
  • 2 garlic cloves, peeled and minced
  • 1 teaspoon salt (3g)
  • 1 fennel bulb, trimmed and chopped finely
  • 4 medium potatoes (about 900g), peeled and cubed
  • 1/2 teaspoon caraway seeds (1g)
  • 1.5 liters vegetable broth (6 cups)
  • Salt and freshly ground black pepper to taste
  • Chives for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  2. Add chopped fennel and sauté for 3–4 minutes. Incorporate cubed potatoes and sprinkle with salt.
  3. Stir in caraway seeds and pour in vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until potatoes are tender.
  4. Blend the soup with an immersion blender until smooth (or use a countertop blender). Taste and adjust seasoning with salt and pepper.
  5. Serve hot, garnished with fresh chives.
