  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 oz taco seasoning mix
  • 14.5 oz diced tomatoes with green chilies
  • 15 oz black beans, drained and rinsed
  • 15 oz corn, drained
  • 1 cup salsa
  • 6 small tortillas (flour or corn, cut into strips)
  • Fresh cilantro (chopped)
  • Sour cream (for serving)
  • Sliced jalapeños (optional, for serving)
  • Diced avocado (optional, for serving)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and sauté until softened, then stir in minced garlic for an additional minute.
  3. Mix in taco seasoning and diced tomatoes (with juice), cooking for one minute before removing from heat.
  4. Spray slow cooker with non-stick spray, then layer salsa on the bottom followed by tortilla strips, half of the beef mixture, black beans, and corn. Repeat layers ending with tortilla strips topped with remaining salsa.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, sprinkle shredded cheese on top and cover until melted.
  7. Serve garnished with cilantro and optional toppings like sour cream and sliced jalapeños.
