  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • 1 cup honey (for glaze)
  • 2 large onions, sliced (for caramelizing)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large roasting pan, place the lamb shoulder and rub it generously with salt and pepper.
  3. Arrange the halved garlic cloves around the lamb.
  4. Sprinkle the chopped herbs over the lamb and inside the cavity.
  5. Cover the pan with foil and roast for about 4 hours or until fork-tender.
  6. Optionally, mix honey with remaining herbs to create a glaze while the lamb roasts.
  7. Sauté sliced onions in a skillet until golden brown and soft.
  8. Increase oven temperature to 400°F (200°C), uncover the lamb, brush with honey glaze, and roast for an additional 20-30 minutes until caramelized.
  9. Let rest for at least 15 minutes before slicing; serve with caramelized onions.
