  • 1/8 teaspoon salt
  • 1 egg
  • 2 tablespoons olive oil
  • 3 tablespoons granulated sugar
  • 2 eggs (for filling)
  • 5 tablespoons granulated sugar (for filling)
  • Zest of 1 lemon
  • 7 ounces Ricotta cheese
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon juice
  • Optional: 1 tablespoon icing sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with parchment paper or cupcake liners.
  2. In one bowl, mix flour and salt. In another bowl, whisk together the egg, olive oil, and sugar until well combined.
  3. Gently fold the dry ingredients into the wet mixture until just combined.
  4. For the filling, beat together two eggs with sugar until creamy. Mix in lemon zest, Ricotta cheese, vanilla extract, and lemon juice until smooth.
  5. Fill each muffin cup halfway with batter, add a spoonful of Ricotta filling on top, then cover with more batter until three-quarters full.
  6. Bake for about 50 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack. Dust with icing sugar if desired before serving.
