  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pink food coloring (optional)
  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and a few drops of milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Set aside.
  3. In another bowl, beat together the softened butter and granulated sugar until light and fluffy using an electric mixer.
  4. Add in the egg and vanilla extract, mixing until fully combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined. If you choose to use pink food coloring, add it now to achieve your desired hue.
  6. In a separate bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, and strawberry jam until smooth.
  7. Using a cookie scoop, drop tablespoons of dough onto a lined baking sheet about two inches apart.
  8. Make an indent in each dough ball with your finger or thumb to create space for the cheesecake filling.
  9. Fill each indent with about half a teaspoon of the cheesecake mixture.
  10. Bake in your preheated oven for about 12–15 minutes or until lightly golden around the edges. Allow cooling before adding glaze.
  11. Drizzle with pink glaze made from powdered sugar mixed with milk, then sprinkle with sparkling sugar before serving.
