  • 1 medium onion (diced)
  • 1 medium red bell pepper (chopped)
  • 3-4 garlic cloves (minced)
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Pinch of red pepper flakes
  • Salt & black pepper (to taste)
  • 1 1/2 cups white rice (uncooked)
  • 1 1/4 cups vegetable broth
  • 1 1/4 cups salsa
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • Fresh herbs for garnish

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain afterward.
  2. In a large skillet or pot, heat oil over medium heat. Sauté diced onion and chopped bell pepper for about 3 minutes until softened. Add minced garlic and spices; sauté for another minute.
  3. Combine soaked rice, salsa, and vegetable broth in the skillet. Bring to a boil.
  4. Cover and reduce heat to low; let simmer for about 15–20 minutes without stirring.
  5. After cooking time, turn off the heat, remove the lid, adjust seasonings as needed, stir in kidney beans, and garnish with fresh herbs.
