Ingredients

For the Bread
2 cups all-purpose flour (spooned and leveled)
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon cinnamon
1 large egg
1⅛ cups sugar
½ cup vegetable oil
2 tablespoons buttermilk
1 teaspoon vanilla extract
3 extra-ripe bananas, mashed
½ cup chopped walnuts

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a large bowl, beat the egg, sugar, vegetable oil, buttermilk, and vanilla until smooth. Stir in the mashed bananas.
  • Gradually fold the dry ingredients into the banana mixture until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and sprinkle the chopped walnuts evenly on top.
  • Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
