  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For the Toffee Sauce: 8 tbsp butter
  • ¾ cup brown sugar
  • ¾ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a deep baking dish.
  2. In a bowl, cream together butter, sugars, and eggs until fluffy. Add in vanilla, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Pour into the dish and bake for 45-55 minutes or until a toothpick comes out clean.
  6. For the toffee sauce, melt butter with brown sugar in a pot over medium-low heat; stir in cream and cook until smooth.
  7. Once baked, pour toffee sauce over the cake and let soak for at least an hour before serving.
