  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 8 oz semi-sweet chocolate (for ganache)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract; mix until combined. Gradually stir in boiling water until smooth.
  4. Pour batter into two prepared round pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  5. For the strawberry filling: Heat chopped strawberries and sugar in a saucepan over medium heat; add lemon juice and cook until softened. Mix cornstarch with water and stir into the strawberries until thickened; set aside to cool.
  6. For ganache: Heat heavy cream until simmering; pour over chopped chocolate and let sit for one minute before stirring until smooth.
  7. Assemble the cake by layering one cake layer on a plate, spreading half of the strawberry filling on top, adding the second layer, topping with remaining filling, and pouring ganache over.
