  • 6 cups strawberries (cleaned, tops removed)
  • 4 cups lemon juice (bottled or fresh)
  • 6 cups granulated sugar

Instructions

  1. Prepare your water bath canner with pint jars.
  2. Puree cleaned strawberries in a food processor until smooth and transfer to a large saucepan.
  3. Add lemon juice and sugar to the strawberry puree; stir well.
  4. Heat over medium until reaching 190-200°F (do not boil) and skim any foam.
  5. Fill each clean pint jar with the mixture, leaving 1/4 inch headspace.
  6. Process in boiling water for 15 minutes; cool on the counter until sealed.
