  • 1 cup all-purpose flour

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Puree the fresh strawberries in a blender until smooth.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, egg, melted butter, vanilla extract, and the strawberry puree.
  4. Combine wet and dry mixtures gently until just blended; the batter should be slightly lumpy.
  5. Heat a non-stick skillet over medium heat and add butter or oil.
  6. Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface (about 2–3 minutes). Flip and cook for another 1–2 minutes until golden brown.
