  • 8 ounces cream cheese (softened)
  • ½ cup butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pound fresh strawberries
  • 1 cup water
  • ½ cup sugar
  • 3 ounces vegan gelling agent (like agar-agar)
  • ¼ cup cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Press softened sugar cookie dough evenly onto the prepared baking sheet and bake for 15–20 minutes until golden brown. Cool on a wire rack.
  3. In a mixing bowl, combine cream cheese, butter, powdered sugar, and vanilla. Whisk until smooth.
  4. Spread frosting over the cooled cookie base, then arrange sliced strawberries on top.
  5. In a saucepan, heat water and sugar until dissolved. Stir in vegan gelling agent and cornstarch until thickened. Allow to cool slightly before pouring over strawberries.
  6. Refrigerate for at least 30 minutes before slicing.
