  • 2 cups all-purpose flour
  • 1 cup unsalted butter (cold, cubed)
  • ⅔ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon vanilla extract
  • 1 teaspoon coarse salt
  • 1 teaspoon granulated sugar
  • 4-5 tablespoons cold water
  • 1 cup powdered sugar
  • 1-2 tablespoons heavy cream or milk
  • Rainbow sprinkles (optional)

Instructions

  1. Prepare the filling by combining sliced strawberries, lemon juice, lemon zest, sugar, and vanilla in a bowl. Let sit for 10 minutes.
  2. Make the dough by mixing flour, salt, and sugar in a bowl. Add cold butter and blend until crumbly. Gradually mix in cold water to form a dough; refrigerate for 30 minutes.
  3. Preheat oven to 375°F (190°C). Roll out the dough into rectangles and cut pieces as bases.
  4. Assemble by placing filling on half of each rectangle, sealing with another piece of dough.
  5. Bake on parchment-lined baking sheet for 25-30 minutes until golden brown.
  6. Cool slightly before glazing with powdered sugar mixed with cream or milk.
