  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • 1 tablespoon cocoa powder
  • 16 oz cream cheese, softened
  • 2 large eggs (for cheesecake layer)
  • Fresh strawberries for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the base with parchment paper.
  2. In a bowl, sift together flour, baking soda, cocoa powder, and salt. Set aside.
  3. Cream butter, oil, and sugar until fluffy; mix in egg and vanilla. Add buttermilk, food coloring, and vinegar. Gradually add dry ingredients until just combined.
  4. Pour batter into the pan; bake for 15-20 minutes or until a toothpick comes out clean. Cool completely.
  5. Reduce oven temperature to 325°F (160°C). Beat cream cheese and sugar until smooth; add eggs one at a time and stir in vanilla.
  6. Pour cheesecake mixture over cooled red velvet base; bake for 40-45 minutes until slightly jiggly in the center. Cool at room temperature then refrigerate for at least four hours or overnight.
  7. Top with halved strawberries and warm strawberry glaze before serving.
