  • 4 cups fresh strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 260 g ladyfingers
  • 2-3 tablespoons freeze-dried strawberries

Instructions

  1. Prepare the strawberry syrup: In a saucepan, combine strawberries and water. Heat for 5 minutes, then mash and strain through a fine sieve. Mix in sugar and lemon juice, simmer until thickened, then cool.
  2. Make the mascarpone filling: Whisk mascarpone cheese, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks, then fold into mascarpone mixture along with cooled strawberry syrup.
  3. Assemble the tiramisu: Dip ladyfingers in the remaining syrup briefly and layer them in a serving dish. Spread half of the mascarpone filling over the ladyfingers, repeat layers, then chill for at least 6 hours.
  4. Before serving, dust with powdered freeze-dried strawberries and garnish with sliced strawberries.
