  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add flour and baking powder; mix until just combined. Press half of the dough into the bottom of the prepared pan.
  3. In another bowl, whisk together fresh lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour over the cookie crust.
  4. Combine flour, granulated sugar, and cold butter in a bowl for the crumble topping; mix until crumbly and sprinkle evenly over the lemon filling.
  5. Bake for 40–45 minutes or until golden brown on top and filling is set. Cool completely before cutting into squares.
