  • 500 g boneless skinless chicken breast
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained (reserve the juice)

Instructions

  1. Prepare all ingredients by dicing chicken into cubes and slicing the vegetables.
  2. In a mixing bowl, coat the chicken with cornstarch, salt, and pepper.
  3. Heat vegetable oil in a frying pan over medium-high heat and fry the chicken until golden brown.
  4. Sauté onions and bell peppers in the same pan until tender.
  5. Mix ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice in a separate bowl.
  6. Combine the chicken with vegetables and pour in the sauce; cook until heated through.
  7. Serve hot over rice or noodles.
