  • 1 cup coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt
  • 2 ripe mangoes
  • Rice papers (for rolling)
  • Fresh mint leaves (optional for garnish)
  • Toasted sesame seeds (optional for garnish)

Instructions

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a cheesecloth-lined bamboo steamer over boiling water for 25-30 minutes until tender.
  3. In a saucepan, heat coconut milk with sugar and salt until dissolved; reserve some sauce for later.
  4. Gently mix the cooked rice with the remaining coconut sauce and let it absorb flavors for about 10-15 minutes.
  5. Peel and slice the mangoes into thin strips.
  6. Soften a rice paper sheet in warm water for 10-15 seconds; lay it flat on a damp towel.
  7. Spread sticky rice on the center of the rice paper, add mango slices and optional shredded coconut.
  8. Roll tightly like a spring roll and repeat with remaining ingredients.
  9. Refrigerate rolls seam side down for 30 minutes before serving.
  10. Slice if desired, drizzle with reserved sauce, and garnish with mint leaves and sesame seeds.
