  • 1 lb daikon radish (chopped into cubes)

  • water
  • 2 tsp salt (more to taste)
  • 1 tsp white pepper (more to taste)
  • cilantro or scallions (for garnish)

Instructions

  1. Blanch the beef ribs in a large pot of boiling water for 3-4 minutes to remove impurities. Drain and set aside.
  2. Return the blanched beef to the pot along with daikon, ginger, garlic, and enough water to cover all ingredients. Bring to a boil, then reduce to a simmer.
  3. Cover the pot and let it simmer for 45 minutes to 1 hour, until the beef is tender.
  4. Season the soup with salt and white pepper to taste.
  5. Garnish each serving with fresh cilantro or scallions before serving hot.
