  • 250 grams T55 flour
  • 50 grams icing sugar
  • 130 grams butter
  • 2 tablespoons water
  • 1 egg yolk
  • 220 ml milk
  • 30 grams sugar
  • 4 egg yolks
  • 20 grams cornstarch
  • 1 Tahitian vanilla bean
  • 250 ml cold heavy cream
  • 400 grams strawberries

Instructions

  1. Prepare the Shortcrust Pastry: In a food processor, blend flour, icing sugar, and salt. Add butter until crumbly. Mix in egg yolk and water to form dough. Chill for 30 minutes.
  2. Bake the Pastry Shell: Preheat oven to 180°C (350°F). Roll out chilled dough and fit into a tart pan. Blind bake for about 25 minutes until golden brown.
  3. Make the Diplomate Cream: Heat milk with half the sugar. Whisk egg yolks, remaining sugar, cornstarch, and vanilla seeds together. Combine mixtures over heat until thickened.
  4. Assemble the Tart: Soak vegan gelatin sheets in cold water; dissolve in warm cream mixture. Whip heavy cream to stiff peaks and fold gently into the diplomat cream. Pour into cooled shell and top with halved strawberries.
