  • 190g graham cracker crumbs
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • Juice of 2 lemons (1 tbsp for filling, juice of half for compote)
  • 1 lb strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
  2. Beat together cream cheese and granulated sugar until smooth. Add salt, vanilla, and eggs one at a time until just combined. Mix in heavy cream, sour cream, cornstarch, and lemon juice.
  3. Pour filling over cooled crust and bake at 325°F (160°C) for about 60-75 minutes until set but slightly jiggly in the center. Cool gradually in the oven.
  4. For the compote, cook strawberries with sugar, cornstarch, and lemon juice over medium heat until thickened. Cool before topping the cheesecake.
  5. Once cooled completely, remove from pan, spread compote on top, and serve.
