  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 12 cups baby spinach
  • Freshly chopped parsley, for garnish

Instructions

  1. Slice chicken breasts in half lengthwise; season with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat. Cook the chicken until golden brown and internal temperature reaches 165°F, about 5-6 minutes per side. Remove from skillet.
  3. In the same skillet, sauté chopped onion until translucent, add minced garlic, then stir in sun-dried tomatoes and Italian seasoning.
  4. Gradually whisk in chicken broth, heavy cream, and Parmesan cheese; simmer until thickened. Season as needed.
  5. Add baby spinach, stirring until wilted, then return chicken to the skillet and coat with sauce.
