  • 8 pineapple rings
  • 1 cup dark vanilla extract (alcohol-free)
  • 1 cup coconut vanilla extract (alcohol-free)
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut vanilla extracts for at least one hour. Drain and pat dry.
  2. Set up three bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Dip each pineapple ring first into the flour, then into the egg mixture, followed by pressing it into the coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coated rings for about one minute on each side until golden brown. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese with powdered sugar and add reserved vanilla extract until smooth.
