  • ½ teaspoon black pepper
  • 2-3 cloves garlic, minced
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 1 ½ cups or a 15-ounce can cooked chickpeas
  • 4 – 5 cups vegan chicken broth
  • 16 – 32 ounces gnocchi
  • ½ cup or more vegan cream
  • 1-2 cups baby spinach, roughly chopped (optional)

Instructions

  1. In a large nonstick pot over medium-high heat, melt vegan butter or heat oil. For an oil-free option, use broth or water.
  2. Add diced onion, celery, and sliced carrots; sauté for 3 minutes until softened.
  3. Stir in black pepper and minced garlic; cook for 30 seconds.
  4. Sprinkle in flour while stirring for 30 seconds.
  5. Mix in cooked chickpeas and gradually add vegan chicken broth.
  6. Add gnocchi, stir gently, and bring to a boil.
  7. Reduce heat to medium-low and simmer for 8 minutes, stirring occasionally.
  8. Stir in vegan cream and chopped spinach; cook for 1–2 minutes until spinach wilts.
  9. Taste and adjust seasoning before serving.
