  • 1 cup vegan butter
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup coconut cream
  • 1/2 cup soaked cashews
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/2 cup maple syrup
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup cornstarch
  • pinch of salt
  • pinch of turmeric (optional, for color)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking pan with parchment paper.
  2. In a large bowl, mix crust ingredients: flour, vegan butter, maple syrup, vanilla extract, and salt until combined. Press evenly into the baking pan.
  3. Bake the crust for 15-20 minutes or until golden. Let cool.
  4. Blend filling ingredients: coconut cream, soaked cashews, lemon juice, zest, maple syrup, sugar, vanilla extract, cornstarch, and salt until smooth.
  5. Heat the filling mixture in a saucepan over medium heat until thickened (4-6 minutes). Pour over cooled crust.
  6. Refrigerate for at least 4-6 hours or overnight until set. Slice and serve.
