  • 150g (¾ cup) brown sugar – light or dark
  • 50g (¼ cup) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 218g (1 ¾ cups) all-purpose flour
  • 2 ½ teaspoon instant espresso powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 170g (1 cup) white chocolate chips

Instructions

  1. Prepare brown butter by melting unsalted butter in a saucepan over medium heat until golden brown and nutty. Let cool for 8-10 minutes.
  2. Preheat the oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  3. In a bowl, whisk together flour, espresso powder, cinnamon, baking powder, baking soda, and salt; set aside.
  4. In another bowl, combine cooled brown butter with brown sugar, granulated sugar, vanilla extract, and egg until fully mixed.
  5. Gradually stir the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Gently fold in white chocolate chips.
  7. Roll dough into balls (about 1 ½ tablespoons each) and place them on the prepared cookie sheet two inches apart.
  8. Bake for 9-11 minutes until edges are set but centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
