  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces white chocolate, melted and cooled
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs and melted butter; press into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Gently fold in melted white chocolate.
  4. Pour the mixture over the crust and smooth the top with a spatula. Bake for 50-60 minutes until edges are set but the center is slightly jiggly.
  5. Cool in the pan for 10 minutes before carefully removing the sides of the springform pan.
  6. In a saucepan over low heat, melt strawberry jam and heavy cream together; drizzle over arranged sliced strawberries.
  7. Refrigerate for at least 4 hours before serving.
