  • 2-3 bay leaves
  • 5-6 garlic cloves, minced
  • 1-2 inches of grated ginger root
  • 2 stalks celery, finely chopped
  • 4 cups low-sodium vegetable stock
  • 1 onion, diced
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste
  • Red chili flakes (optional)
  • Handful of cilantro, chopped
  • Juice of 1 tablespoon lime or lemon
  • 4 baby bok choy, chopped
  • 2 cups mushrooms, quartered
  • 1 cup thin rice noodles

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. In a large pot over medium heat, add oil (if using) and sauté the onion, garlic, ginger, and bay leaves until fragrant.
  3. Stir in celery and mushrooms; cook for about 5 minutes until softened.
  4. Pour in vegetable stock along with turmeric powder, salt, pepper, and lime juice. Bring to a boil.
  5. Reduce heat to low; add bok choy and rice noodles. Simmer for about 10 minutes until noodles are tender.
  6. Remove from heat; stir in cilantro before serving.
